What kind of dish is Tonpeiyaki??
Tonpeiyaki is a dish made by frying pork, cabbage, and bean sprouts and wrapping them in egg. It is usually seasoned with okonomiyaki sauce and mayonnaise.
A popular teppanyaki dish.
Teppan means iron plate, and yaki means stir-fry. In Japanese, it is written as “鉄板焼き”.Teppanyaki includes okonomiyaki, yakisoba, steak, and more.
In the restaurant where tonpeiyaki originated, the dough made from wheat flour is spread thinly like a crepe, pork loin is placed on top, and then egg is placed on top and seasoned with ketchup.
For this reason, it was originally called “konamon ryori” like okonomiyaki and takoyaki. “Konamon cuisine” is a term that refers to staple foods made with wheat flour.
Nowadays, the cooking method of wrapping ingredients in egg, as in this recipe, is mainstream.
Tonpeiyaki does not use wheat flour and is full of vegetables, so it is healthier than okonomiyaki and takoyaki. It is also easy to make with cheap ingredients.
The combination of okonomiyaki sauce, bonito flakes, and green laver is the best.
It’s also delicious with cheese, kimchi, or beni shoga(pickled ginger). Try sprinkling shichimi pepper or finding your favorite seasoning. And, although it may be unusual, it’s also delicious with natto.

- Pork komagire(Thinly sliced pork shoulder loin) 50g
- Sesame oil 4g
- ★Cabbage 80g
- ★Moyashi(bean sprout) 50g
- ★Salt 1g
- ★Pepper moderate amount
- ☆2Eggs
- ☆Potato starch 4g
- ☆Water 8g
- ☆Sesame oil 4g
- Okonomiyaki sauce (=Otafuku sauce) 12g ※Doro sauce is also good.
- Mayonnaise 12g
- Aonori(Green laver) moderate amount
- Bonito flakes 1g
⋈*“Otafuku Sauce” is sweet and “Doro Sauce” is spicy. Use whatever sauce you like.
Tonpeiyaki (okonomiyaki style omelette recipe) COOKING INSTRUCTIONS
- Cut the cabbage into 3mm stripes.
- Wash the cabbage and bean sprouts.
- Heat sesame oil in a frying pan and fry the pork.
- When the pork changes color, fry the cabbage and bean sprouts together.
- When the vegetables are soft, season the filling with salt and pepper.
- Mix the potato starch with water, then immediately add the eggs and mix well. This process creates a strong egg sheet.
- Heat sesame oil in another frying pan and pour in the eggs. Tilt the frying pan to create a circular sheet.
- When the eggs are cooked, turn off the heat.
- Place the filling on the egg sheet and roll it up.
- Slide it onto a plate.
- Decorate with okonomi sauce, mayonnaise, bonito flakes, and green nori.
