Okonomiyaki(お好み焼き)

Okonomiyaki is a pancake made from shredded cabbage, eggs, and flour.

“Okonomi” means like or love. As the name suggests, okonomiyaki is a popular dish among all generations.

In recent years, it has gradually become known to foreigners as well.

Okonomiyaki sauce is similar to the sauce used for yakisoba and takoyaki. These sauces can awaken your appetite when you feel tired during the summer.

This dish use a lot of cabbage and grated yam. These vegetables protect your stomach and promote digestion.

The grated yam give the dish springy texture and less dry.

Okonomiyaki is a dish with a strong taste, but it also has a healthy side because you can consume a lot of vegetables and protein.

Seafood such as squid and shrimp also go well with it. My recommended variations are adding natto, kimchi, and cheese.

Also, using ponzu and chili oil instead of sauce is a recommended variation.

INGREDIENTS (4SERVINGS)

  • Pork belly (160g)
  • ☆Cabbage (500g)
  • ☆Grated Chinese yam (200g)
  • ☆4 Eggs
  • ☆Dashi stock granules (5g)
  • ☆Soy sauce (6g)
  • Wheat flour (160g)
  • Okonomiyaki sauce (80g)
  • Half Calorie Mayonnaise (40g)
  • Dried bonito flakes (5g)
  • Green laver (3g)

Grated Chinese yam = tororo Dried bonito flakes = katsuobushi Green laver = aonori

COOKING INSTRUCTIONS

  1. Cut the cabbage into 2mm strips.
  2. Mix the cabbage, grated yam, egg, dashi stock granunles, and soy sauce thoroughly.
  3. Add the flour in several batches. Mix well after each addition.
  4. Preheat the electric griddle (hot plate) to 230°C.
  5. Cut the pork belly in half.
  6. Arrange the pork belly on the electric griddle and place a ladleful of batter on top.
  7. Place the pork belly on top of the batter.
  8. When the bottom side is cooked through, flip it over.
  9. When both sides are golden brown, top with okonomiyaki sauce, mayonnaise, bonito flakes, and green laver.

Slightly browning the sauce adds a great aroma and flavor.
