Butaniku no shougayaki (豚肉の生姜焼き)

What the kind of dish is Butaniku no shougayaki??

Shogayaki is a Japanese home-cooked dish made by seasoning pork with ginger, soy sauce, and mirin. It’s a flavor that goes well with rice. Shogayaki loved by everyone. It is a menu that is eaten frequently in every household. You can buy at a bento shop also can eat at restaurant.

The cooking method is different for each household, such as marinating the meat in seasonings and grilling it, or coating the grilled meat with sauce.

This time I’m using meat called Komagire. In Japan, meat scrapes are called “Komagire” or “Kiriotoshi”.

Kiriotoshi has only one part of meat, but Komagire has a mixture of various parts such as thigh, shoulder, rib, and arm. I like to use komagire because it contains moderate fat. The size of a slice of Kiriotoshi is larger than that of Komagire, so it is used depending on the dish.

What kind of food is ginger??

It is used not only as a spice but also as an ingredient in sweets and Chinese medicine.

The spicy component of ginger promotes blood circulation, digestion, and has antibacterial effects, while the aromatic component increases appetite and has anti-inflammatory effects.

The medicinal ingredients are contained just under the skin, so it is best to use it without removing the skin. I lightly scrape the surface with a spoon before using.

COOKING INSTRUCTIONS

① Slice the onion and ginger.

② Place onion in a heat-resistant container and heat in the microwave for 3 minutes.

③ Sprinkle a thin layer of flour on the surface of the pork and fry in a frying pan with hot sesame oil.

I recommend using non-sticky “cooking flour”.

④ When the meat changes color, add onions, sliced ginger and seasonings and stir-fry.

The menu for this day is rice, miso soup, shogayaki, and butter-roasted potatoes. Also see this article. 👉 High-quality butter-roasted potatoes 👉 Miso soup with lots of ingredients
