I put cheese and mayonnaise on salmon and grilled it in the oven.

The richness of the butter, the sourness of the mayonnaise, and the aroma of the cheese combine to create an exquisite dish.

It’s very easy to make because you just arrange the ingredients on a plate and grill it in the oven.

You can also get a lot of vegetables. Mushrooms, butter and soy sauce go very well together. Feel free to use whatever you like, such as king mushrooms, shiitake mushrooms, or shimeji mushrooms.

Maitake mushrooms have a flavor very similar to shimeji mushrooms. When using for simmered dishes, the broth will be stained black, so boil it first before using. You can use it as is if you are grilling it like in this dish.

For fish, you can use Spanish mackerel, flounder, yellowtail, etc. instead of salmon.

Coho salmon is called ginzake(銀鮭)in Japan. Coho salmon is usually sold salted. I recommend the one labeled as 甘塩 (low salt content).

INGREDIENTS for Baked salmon with mayonnaise and cheese(2SERVINGS)

  • onions 120g
  • maitake mushrooms 60g
  • butter 10g
  • soy sauce 7g
  • coho salmon(甘塩) 140g
  • half calorie mayonnaise  20g
  • shredded cheese 30g
  • parsley moderate amount

If using nonsalted salmon, rub in 1g of salt.

Baked salmon with mayonnaise and cheese COOKING INSTRUCTIONS

Preparation: Preheat the oven to 250 degrees.(250 degrees Celsius is 482 degrees Fahrenheit.)

①Cut the onion and maitake mushrooms into suitable sizes.

② Arrange the onions and maitake mushrooms on a heat-resistant plate.

③ Dice the butter.

④ Drizzle the vegetables with soy sauce and sprinkle with butter.

⑤ Place the salmon on top.

⑥ Squeeze the mayonnaise and put shredded cheese on top.

⑦ Grill at 250 degrees for 25 minutes.

⑧ Take it out of the oven and sprinkle the parsley.
