Oroshi hambagu(おろしハンバーグ)
What kind of dish is Oroshi hambagu??
Oven-grilled hamburger steak topped with sauce made from grated Japanese radish and soysauce. This light sauce is as popular as tomato sauce or demi-glace.
Grated radish is called “daikon oroshi “.
At home, hamburgers are often grilled in a frying pan. Since I use the oven, I don’t have to flip the hamburgers, and can do other things while they’re cooking.
Therefore, it is a dish with excellent time performance. You can also make a large amount, freeze it, and eat it with different sauces depending on your mood.
I use minced meat with a 7:3 ratio of beef and pork.
A slightly large amount of bread crumbs is added to the dough, giving it a soft texture.
The lower part of the daikon radish is hard and pungent because it contains a lot of fiber and isothiocyanate. This is suitable for grated and used as a garnish for sashimi.
The top part of the radish is sweet and soft, making it suitable for simmered dishes like oden and buri daikon.

INGREDIENTS for Hamburger steak with Oroshi sauce (5SERVINGS)
- Sauce ꕤ…˖*
- daikon radish 300g
- garlic 3g
- soy sauce 45g
- sugar 3g
- mirin 25g
- sake 15g
- hambagu ꕤ…˖*
- ★milk 100g
- ★breadcrumbs 40g
- onions 150g
- ☆minced beef and pork 450g
- ☆2eggs
- ☆salt 6g
- ☆pepper moderate amount
- green shiso leaves 6pieces
Hamburger steak with Oroshi sauce COOKING INSTRUCTIONS
⋈*Preheat the oven to 230 degrees.(230 degrees Celsius is 446 degrees Fahrenheit.)
➀Grate the radish and garlic.
②Place the radish, garlic, soy sauce, sugar, mirin, and sake in a pot and bring to a boil, then turn off the heat.
It can be stored in the refrigerator for several days.
③ Soak the bread crumbs in milk.
④ Chop the onions into small pieces.
⑤ Knead the soggy bread crumbs, minced beef and pork, eggs, salt, and pepper.
It is best to use a food processor for this step.
⑥ Add onions to the dough and knead by hand. The dough will be soft as it is, so let it rest in the refrigerator for 1 hour.
⑦Divide into 6 equal parts(about 150g), roll and make a dent in the center.
⑧Grill in an oven preheated to 230 degrees for 25 minutes.
⑨Pour the grated sauce over the grilled hamburger steak.
⑩Top with shiso leaves and leftover grated radish.
