ブロッコリーの山かけ(Broccoli no yama kake)

What kind of dis is Broccoli no yama kake??

It is a dish of broccoli topped with grated yam and seasoned with salt koji.

Grated Chinese yam is called “tororo”. The dish with grated yam is called “Yamakake”. For more information on yams, see this article.

You can use just soy sauce for seasoning, but adding salt koji will add a little sweetness. It will have a mild taste.

What kind of food shio-koji??

Shio-koji is a seasoning made by fermenting and aging a mixture of salt, koji, and water.Koji is made by attaching fungi to grains and culturing them.The koji used for shio-koji is made from “rice koji”, which is made by attaching fungi to rice.

There are two types of shio-koji: grainy and liquid. I’m using the liquid one this time.

INGREDIENTS

  • broccoli 60g
  • Chinese yam 60g
  • dried bonito 1g
  • liquid salted koji 5g
  • soy sauce 5g

COOKING INSTRUCTIONS

➀Wash and cut the broccoli.

②Wrap and heat in the microwave for 2 minutes.

③Grate the yam.

④Put the broccoli on a plate.

⑤Mix soy sauce and shio-koji and pour over the broccoli.

⑥Top with bonito flakes.

⑦Eat while mixing.

ブロッコリーの山かけってどんな料理??

ブロッコリーにとろろ、塩麴、醤油をかけた料理です。

長芋をすりおろしたものを「とろろ」といいます。 とろろを入れた料理は「山かけ」と呼ばれます。

味付けは醤油だけでも大丈夫ですが、塩麴を加えるとほんのり甘みが加わります。 マイルドな味わいになります。

塩麹ってどんな食べ物??

塩麹とは、塩・麹・水を混ぜて発酵・熟成させた調味料です。麹は穀物に菌を付けて培養して作ります。塩麹に使われる麹は、お米に菌を付けて作る「米麹」から作られます。

塩麹には粒状と液体の2種類があります。 今回は液体のものを使います。

大分県の糀店が塩糀を使ったレシピを紹介してから大ブームとなりました。

材料

  • ブロッコリー  60g
  • 長芋  60g
  • かつお節  1g
  • 液体塩麹  5g
  • 醤油  5g

➀ブロッコリーを洗って切り分ける

②ラップをして電子レンジで2分加熱する

③長芋をすりおろす

④ブロッコリーを皿に盛る

⑤醤油と塩麴を混ぜてブロッコリーにかける

⑥鰹節をのせる
