Yamaimo no teppan yaki (山芋の鉄板焼き)

This is a dish made by grating Chinese yam and baking it in the oven. This is a standard menu item at izakaya restaurants.

Cooking on an iron plate is called ”teppan yaki”, and the name comes from the fact that it is made in an iron vessel like a skillet.

Iron utensils are heavy and difficult to maintain, so I use heat-resistant plates.

INGREDIENTS(3SERVINGS)

  • nagaimo(Chinese yam) 300g
  • ☆soy sauce 9g
  • ☆mirin 9g
  • ☆dashi stock granules 3g
  • ☆egg
  • green onion 5g
  • bonito flakes 1g
  • ponzu sauce 20g

COOKING INSTRUCTIONS

Preparation: Preheat oven to 300 degrees. If it’s not 300 degrees, make it as high as possible.

① Peel the skin of nagaimo with a peeler and grate it.

② Mix soy sauce, mirin, dashi stock granules, and egg well.

③ Mix the nagaimo and seasonings well and place in a heat-resistant dish.

④ Bake on the middle rack of the oven for 20 minutes.

⑤ When eating, add green onions, bonito flakes, and ponzu sauce.

Ponzu is a sour sauce made by mixing soy sauce, vinegar, and citrus juice.
