Yamaimo no teppan yaki (山芋の鉄板焼き)

This is a dish made by grated mountain yam and baking it in the oven. This is a standard menu item at izakaya restaurants. It looks similar to okonomiyaki or monjayaki, but it is a gluten-free dish that does not use wheat flour.
The appeal of this dish is its soft and creamy texture. This unique texture is achieved by grating mountain yam. (Grated mountain yam is called tororo.)
Cooking on an iron plate is called ”teppan yaki”, and the name comes from the fact that it is made in an iron vessel like a skillet.
Iron utensils are heavy and difficult to maintain, so I use heat-resistant plates.

INGREDIENTS for Grated mountain yam teppanyaki(3SERVINGS)
- yamaimo(mountain yam) 300g
- ☆soy sauce 9g
- ☆mirin 9g
- ☆dashi stock granules 3g
- ☆egg
- green onion 5g
- bonito flakes 1g
- ponzu sauce 20g
You can use either soy sauce or ponzu sauce on it, whichever you prefer.
Grated mountain yam teppanyaki COOKING INSTRUCTIONS
Preparation: Preheat oven to 300 degrees. If it’s not 300 degrees, make it as high as possible.
① Peel the skin of yamaimo with a peeler and grate it.
② Mix soy sauce, mirin, dashi stock granules, and egg well.
③ Mix the yamaimo and seasonings well and place in a heat-resistant dish.
④ Bake on the middle rack of the oven for 20 minutes.
⑤ When eating, add green onions, bonito flakes, and ponzu sauce.
Ponzu is a sour sauce made by mixing soy sauce, vinegar, and citrus juice.
