Tori no yuan yaki(鶏の幽庵焼き)

This is a dish in which chicken is marinated in a sauce made from sake, soy sauce, mirin, and yuzu juice. The menu has a refreshing flavor and a seasonal feel.

About winter solstice

In Japan, it has long been customary to take a bath with yuzu on the day called the “winter solstice”.

The winter solstice is the day when the sun’s power is at its weakest, and it was believed that after this day, the sun’s power would become stronger again (= your luck would turn towards you again).

Taking a bath with yuzu on the winter solstice means purifying your body before attracting good luck.

If you have a bathtub, try floating the yuzu after squeezing the juice. It smells very nice♡

INGREDIENTS (2SERVINGS)

  • chicken thigh 200g
  • ☆soy sauce 30g
  • ☆mirin 30g
  • ☆sake 30g
  • ☆1/4yuzu

COOKING INSTRUCTIONS

➀ Poke several holes in the chicken skin with a fork. This will prevent the chicken from shrinking.

② Mix soy sauce, mirin, sake, and yuzu juice.

③ Marinate the chicken in the sauce for 30 minutes or more.

④ Place on the top shelf of the oven and roast for 10 minutes using the grill function.

⑤ Brush with the sauce. This process creates a beautiful shine on the chicken skin.

⑥ Grill for another 10 minutes on the middle rack.

The process photo shows chicken and Spanish mackerel being cooked at the same time.

⋈*The oven I use is Toshiba’s “Ishigama Dome”. I like that it won’t break even after 10 years of use and is easy to clean.
