INGREDIENTS (4 Servings)

  • Salted Coho Salmon: 360g (4 fillets)
    • Tip: If using unsalted salmon, rub with 2g of salt first.
  • Rape Blossoms (Nanohana): 60g
  • Large Eggs: 2
  • Oil: 3g (for scrambling)
  • Half-Calorie Mayonnaise: 50g
  • Garnish Veggies: Onions, carrots, and sweet potatoes (sliced thin).
  • Olive Oil, Salt, & Pepper: For roasting vegetables.

INSTRUCTIONS

  1. Prep the Greens: Finely chop the rape blossoms. Place in a heat-resistant bowl, cover loosely with plastic wrap, and microwave for 20 seconds. Let them cool, then squeeze out the excess moisture.
  2. Scramble: Heat oil in a pan and make soft, small-curd scrambled eggs.
  3. The “Natane” Topping: In a small bowl, mix the squeezed rape blossoms, scrambled eggs, and mayonnaise until combined.
  4. Assemble: Arrange the salmon fillets on a baking sheet. Spread the egg-mayo mixture generously over each piece.
  5. One-Pan Roasting: Toss your garnish vegetables in a little olive oil and place them around the fish.
  6. Bake: Roast in a preheated oven at 230°C (446°F) for about 20 minutes.
  7. Finish: Season the roasted vegetables with a pinch of salt and pepper.
