Omurice (often spelled Omelet Rice) is a brilliant combination of the words Omelet and Rice. It is a beloved Japanese comfort food featuring savory, ketchup-seasoned chicken rice wrapped neatly inside a thin, soft-boiled egg.

This dish has captured hearts worldwide and inspired many delicious variations in Japan, such as:

  • Omusoba: Stir-fried yakisoba noodles wrapped in an egg cover.
  • Omuchahan: Savory fried rice snuggled inside an omelet.
  • Omuhayashi: A luxurious version where rich demi-glace sauce is poured over the top.

Omurice has been my absolute favorite menu since I was a child. As an adult, I love eating it with a dash of Tabasco for a subtle, spicy kick! While trendy recipes today often feature thick, runny eggs, my signature recipe stays true to the nostalgic, old-fashioned style wrapped in a beautifully thin egg.

★ Chicken Rice

  • Steamed rice (warm): 330g
  • Chicken breast or thigh: 50g
  • Carrot: 50g
  • Onion: 50g
  • Butter: 5g
  • Garlic: 5g
  • [Seasoning Mix ☆]
    • Salt: 1g
    • Pepper: Moderate amount
    • Consommé (Japanese bouillon powder): 2.5g
    • Ketchup: 50g
    • Worcestershire sauce: 3g

★ Omelet

  • Eggs: 4 large
  • Low-fat fresh cream: 40g (RD Tip: Adds fluffiness with less fat!)
  • Half-calorie mayonnaise: 4g (RD Tip: Keeps the egg tender and soft!)
  • Salt: 2g
  • Pepper: Moderate amount
  • Butter: 20g (for frying)
  • Ketchup & Parsley: Moderate amount (for garnish)

COOKING INSTRUCTIONS

Step 1: Make the Chicken Rice

  1. In a small bowl, pre-mix the [Seasoning Mix ☆] (salt, pepper, consommé, ketchup, and Worcestershire sauce) so it incorporates evenly later.
  2. Cut the chicken into small 1 cm (0.4-inch) squares. Coarsely chop the carrots and onions.
  3. Melt 5g of butter in a frying pan over medium heat and fry the chicken until cooked through.
  4. Add the chopped garlic, carrots, and onions. Sauté until the vegetables are soft and translucent.
  5. Turn off the heat. Add the warm steamed rice and gently loosen it with a spatula.
  6. Pour in the pre-mixed seasonings in two separate batches, mixing well after each. Turn the heat back to medium and stir-fry briefly, being careful not to let the ketchup burn. Set the rice aside.

Step 2: Make the Omelet & Wrap

  1. In a bowl, combine the eggs, low-fat fresh cream, half-calorie mayonnaise, salt, and pepper. Whisk vigorously until smooth.
  2. Heat a clean frying pan and melt 20g of butter over high heat.
  3. Pour in the beaten egg mixture. Quickly stir with chopsticks to create a soft-boiled, thin omelet. Turn off the heat immediately.
  4. ★ The Pro Hack: Carefully slide the thin egg onto a large piece of plastic wrap laid out on your counter.
  5. Place half of the chicken rice right in the center of the egg.
  6. Using the edges of the plastic wrap, gently fold the egg over the rice and press to mold it into a beautiful, neat football shape.
  7. Flip it onto a plate, remove the wrap, and garnish with ketchup and a sprinkle of fresh parsley. Repeat for the second serving.
