What the kind of dish is Matsukazeyaki??

It’s a meatloaf-like dish made with tofu and chicken. It is often eaten on New Year’s Day. Easy to make if you have a food processor.

By adding firm tofu to minced chicken, it has a fluffy and soft texture.

In terms of nutrition, you can ingest minerals such as magnesium and calcium, and it is high in protein and low in fat.

This is a healthy dish recommended during the year-end and New Year holidays, when it’s easy to binge-drink.

Originally, poppy seeds are used, but white sesame, which is easy to obtain, is used.

Each New Year’s dish has a meaning. Matsu means pine. Pine represents peace and longevity as it maintains its edge even in winter and has a long lifespan.

Also, Matsukazeyaki has decorations on the front, but the back is flat. This expresses “no secrets”.

It was a 15 cm square and about 3 cm thick. The oven I use is Toshiba’s “Ishigama Dome”. I like that it won’t break even after 10 years of use and is easy to clean.

  • ☆Firm tofu 150g
  • ☆Onion 150g
  • ☆Minced chicken 350g
  • ☆Egg 50g
  • ☆Sugar 20g
  • ☆White miso 30g
  • ☆Soy sauce 15g
  • ☆Sake 15g
  • Ground sesame 5g
  • Green laver moderate amount

This recipe use firm tofu, not silken tofu otherwise it takes a long time to drain and it becomes too soft.

How to make Matsukazeyaki (Healthy tofu meatloaf)

  1. Wrap the tofu with kitchen paper and put it on a colander. Place a weight on top and drain for 1 hour. Heat in the microwave for a few minutes if you are in a hurry.
  2. Fold the cooking sheet to fit the mold
  3. Preheat the oven to 170°C. 170 degrees Celsius is 338 degrees Fahrenheit
  4. Chop the onion and microwave it in a heat-resistant container for 1 minute. Once cooled, squeeze out all the water.
  5. Put minced chicken, egg, onion, sugar, white miso, soy sauce and sake into a food processor. The filling will overflow from the container, so work in batches.
  6. Pour into the mold and bake on the bottom rack of the oven.
  7. Bake in a preheated oven at 230°C for 10 minutes, then at 170°C for 30 minutes.
  8. Take off the heat and remove from the mold. Be careful not to burn yourself with water spilling when you take it out of the oven.
  9. Sprinkle with sesame and green laver.
