This dish is made by stir-frying gizzards and garlic scapes and seasoning them with a seasoning called Weipa.

How to make Stir-fried Sunagimo (gizzard) And Garlic Scape Weipa Flavor

To enjoy gizzards, it is important to properly prepare them before cooking. Also, gizzards are thick and difficult to cook through, so it is best to slice them thinly.

  1. Cut the gizzards in half
  2. Scrape off the white parts of the gizzard with a knife. 
  3. Gizzards are elastic, so doing this allows them to cook quickly and make them easier to eat. Please watch the video to learn how to prepare gizzards.
  4. Cut off about 3mm from both ends of the garlic scapes and then cut into 4cm wide pieces.
  5. Peel the garlic and cut into bite-sized pieces
  6. Heat sesame oil in a frying pan and fry the garlic.
  7. Add the gizzards to the pot and stir-fry. Press down occasionally with a spatula to brown the gizzards until fragrant.
  8. Add the chili peppers and continue to stir-fry.
  9. Once the gizzards are cooked through, add the garlic scapes and continue to stir-fry.
  10. Once the garlic scapes have softened slightly, add the weipa to the pot.
  11. Sprinkle sake over the weipa and dissolve.
  12. Mix everything together.
  13. Add the soy sauce and stir with a spatula while shaking the pot to distribute the seasoning evenly.
