Okara Hambagu(おからハンバーグ)
What kind of dish is Okara Hambagu??
hambagu = hamburger steak
This is a recipe for a healthy hamburger steak (hamburg) made by mixing ground meat with “okara.”
Okara is the pulp remaining after soybeans have been strained to make soymilk.
It is low in fat and extremely rich in dietary fiber, making it an excellent ingredient to reduce calories and aid in your diet.
By replacing a portion of the ground meat with okara, you get a finished product that is surprisingly fluffy, light, and juicy, despite its lower calorie count.
Economic Benefits
Another significant benefit of okara hamburg is its affordability.
It’s a budget-friendly ingredient that’s easy to incorporate into your regular cooking.
Okara is very reasonably priced, often costing around 100 yen for 200g.
Cooking Tips
Since okara has a very neutral flavor, mixing it into meat dishes like hamburg or croquettes will not detract from the taste of the dish.
A note on storage: While okara itself can be frozen, freezing the prepared okara hamburg patties is not recommended. Doing so causes them to lose moisture and the signature fluffy texture.

⋈*Preheat the oven to 230 degrees.(230 degrees Celsius is 446 degrees Fahrenheit.)The oven I use is Toshiba’s “Ishigama Dome”. I like that it won’t break even after 10 years of use and is easy to clean.
- Soak the breadcrumbs in milk.
- Finely chop the onion and place in a large bowl..
- Mix breadcrumbs, onion, ground meat, okara, egg, salt, and pepper until well combined.
- Divide the dough into 6 equal parts and roll into balls.
- Place the burgers on a baking tray.
- Place the baking tray on the middle rack of the oven and bake for 30 minutes.
- Add demi-glace sauce, ketchup, red wine, water, salt, pepper, butter and shimeji mushrooms to a frying pan and bring to a boil.
- Put the sauce on the hamburger and put the cheese on it.

Stuffed green peppers (stuffed green peppers):This is a dish of hamburger meat stuffed into green peppers. This is recommended because it is easy to eat even for those who don’t like the bitterness or green smell of green peppers. I make the hamburger steaks and stuffed green peppers at the same time, and often use the stuffed green peppers for my lunch box the next day.
