This is a hamburger steak recipe made by mixing ground meat and okara(soy pulp).
Okara is what’s left over after squeezing soy milk out of soybeans to make tofu.
Low in fat and high in fiber, perfect for dieting. By replacing some of the ground meat with soy pulp, we create a low-calorie hamburger steak with a fluffy texture.(˘︶˘♡)。.:☆
Another advantage of okara hamburgers is that okara is sold for around 100 yen per 200g, making it very cost-effective.
Okara itself doesn’t have much flavor. So even if you mix it with meat such as hamburgers and croquettes, you can eat it without much discomfort.
Okara can be frozen, but we do not recommend freezing okara hamburger steak as it will dry out and lose its fluffy texture.

- Onion 150g
- ★Aibiki niku (Mixture of ground beef and ground pork) 300g
- ★Okara (soy pulp) 150g
- ★2 Eggs
- ★Salt 4g
- ★Pepper moderate amount
Sauce
- ♪Can of demi glace sauce 290g
- ♪Ketchup 15g
- ♪Red wine 100g
- ♪Water 300g
- ♪Salt 2g
- ♪Pepper moderate amount
- ♪Butter 5g
- ♪Shimeji mushrooms 60g
- 3 Sliced cheese
Healthy Okara hambagu Recipe with Demi-glace sauce COOKING INSTRUCTIONS
⋈*Preheat the oven to 230 degrees.(230 degrees Celsius is 446 degrees Fahrenheit.)The oven I use is Toshiba’s “Ishigama Dome”. I like that it won’t break even after 10 years of use and is easy to clean.
- Soak the breadcrumbs in milk.
- Finely chop the onion and place in a large bowl..
- Mix breadcrumbs, onion, ground meat, okara, egg, salt, and pepper until well combined.
- Divide the dough into 6 equal parts and roll into balls.
- Place the burgers on a baking tray.
- Place the baking tray on the middle rack of the oven and bake for 30 minutes.
- Add demi-glace sauce, ketchup, red wine, water, salt, pepper, butter and shimeji mushrooms to a frying pan and bring to a boil.
- Put the sauce on the hamburger and put the cheese on it.
