  • Beef: 330g Chunk of beef shoulder (or beef thigh)
  • Seasoning: 3g Salt, Pepper (to taste), 3g Grated garlic
  • For Searing: 3g Oil
  • Rice: 420g Steamed white rice (Garlic rice is also a great alternative!)
  • Toppings: 3 Egg yolks, Wasabi or Mustard (optional)
  • Oroshi Sauce (☆): * 30g Grated daikon radish
    • 60g Ponzu sauce

How to make Roast beef don
  1. Bring to Room Temp: Remove the beef from the fridge and let it sit until it reaches 15–20°C.
  2. Season: Rub the meat with salt, pepper, and garlic. Let it sit for 1 hour.
  3. Preheat: Set your oven to 140°C (285°F).
  4. Sear: Heat oil in a pan over medium heat and sear all surfaces of the meat until browned.
  5. Roast: Wrap the meat in aluminum foil, place on a tray, and roast in the middle rack for 20 minutes.
  6. Rest: Remove from the oven and let it rest (still wrapped) for 15 minutes. Core temp should be 55–60°C.
  7. Slice: Using a sharp knife, slice the beef into thin pieces (approx. 15g each).
  8. Sauce: Mix the grated radish with the ponzu.
  9. Assemble: Place rice in a bowl, arrange the beef, and top with an egg yolk.
  10. Finish: Pour the Oroshi Ponzu over the top and enjoy!

Quick Tip for Smaller Portions: For 200g of meat: Skip the pan and roast at 250°C for 10 mins (preheated). For 150g of meat: Roast at 250°C for 10 mins (no preheating).
