What kind of dish is Kimchi Fried Rice ??

Fried rice is called chahan in Japan. (This dish is sometimes called yakimeshi.)

Chahan (fried rice) is one of the must-have dishes at Chinese restaurants and ramen restaurants.

The most common ingredients for chahan are scrambled eggs, chopped ham or roast pork, and chopped vegetables like carrots and onions. These are stir-fried with rice and seasoned with chicken broth mix, Somi shantan, or soy sauce. 

Chahan (fried rice) is a dish with many variations, but kimchi is a very popular ingredient.

This recipe is based on Gyoza no Ohsho’s Kimuchi Chahan and uses minced pork, egg and kimchi.

It is a dish that originated in China and was introduced to Japan, so the authentic way to cook it is in an iron wok (a heavy, large, deep iron frying pan). 

A wok has excellent heat conductivity, allowing excess moisture to evaporate easily, making it the perfect pot for making delicious fried rice.

However, most ordinary households do not own an iron wok.

Here we will introduce some tips for making delicious fried rice using a regular frying pan at home.

Follow a few tips to make delicious chahan:

Delicious fried rice requires rice that isn’t clumped together like balls.

  1. If using freshly cooked rice
    After cooking, spread the rice on a tray and let it cool for about 10 minutes. This is because warm rice tends to become sticky.
  2. If using refrigerated rice
    Heat the rice in the microwave for 2-3 minutes before frying. Slightly warm rice absorbs oil better than completely cold rice. This distributes the oil evenly across the surface of the rice grains, resulting in a fluffy finish. Alternatively, mix beaten egg or mayonnaise into cold rice before frying. This will help the rice absorb the oil and loosen any stuck-together rice grains. If mixing in egg, mix it just before frying to prevent the rice from absorbing the egg’s moisture and becoming sticky.
  3. Keep the frying pan away from the heat. When professional chefs use a wok, they lift the pot and shake it to mix the rice and ingredients, but at home, the heat is weak, so leave the pot on the stove and mix by scooping with a spatula.

How to make Kimchi Fried Rice (Kimchi Fried Rice)

  1. Cut a slit in the white part of the shiro negi (White leek) lengthwise, then cut into 1cm pieces.
  2. Peel and chop the garlic and ginger.
  3. Stir-fry the sesame oil, gochujang, garlic, ginger, and shiro negi (White leek).
  4. Add the minced pork.
  5. Once the minced pork changes color, move it to the side of the pan and use the remaining space to create scrambled eggs.
  6. Add the warm rice and top with the Chicken brooth mix, soy sauce, sake, and kimchi. Sprinkle the seasoning over the rice.
  7. Fry the rice and stir until golden brown.
