Homemade Rye Bread With Manuka Honey(自家製ライ麦パン)
What kind of food is Homemade Rye Bread With Manuka Honey?
This is a recipe for toast made with rye bread made in a home bakery, topped with cream cheese, dried fruit, and nuts, and drizzled with plenty of Manuka honey.
Rye can be grown in acidic soils and cold environments unsuitable for wheat cultivation. Its main producing countries are Germany, Poland, and Russia.
I was surprised by the aroma and firmness the first time I tried rye bread made in Russia… This recipe uses a mixture of strong wheat flour and rye flour, and uses dry yeast for fermentation.
Therefore, I think that people who are eating rye bread for the first time will be able to eat it without feeling any discomfort when making the rye bread using this recipe.

Characteristics of rye bread
- Wheat flour bread is typically fermented using yeast. However, in Germany and other countries, rye bread is fermented using a yeast called rye sourdough starter. Rye sourdough starter has high fermentation power and a sour taste. As a result, German bread has a distinctive lingering aroma and sour taste.
- Rye flour has a low GI value. The GI value of rye bread is generally around 55, lower than the GI value of wheat flour bread, which is around 95, and can be expected to have the effect of slowing the rise in blood sugar levels. This is due to the abundant dietary fiber in rye, which acts to moderate the absorption of sugar.
- Rye has little gluten, so it does not rise easily. Rye bread has a dense texture. If you are making rye bread using a home bakery, we recommend mixing it with wheat flour to avoid mistakes.
- High nutritional value. Compared to strong wheat flour, it is significantly higher in vitamins, iron, minerals, and dietary fiber.
