Fudgy Rum Cranberry & Nut Brownies (Easy & Moist Recipe)
Brownies are a classic American chocolate treat.
While rich chocolate cakes can sometimes feel a bit heavy or monolithic, this recipe creates a delightful balance by combining toasted walnuts, sliced almonds, and tart cranberries for a wonderfully layered texture.
What Makes This Recipe Special?
- A Touch of Warm Milk: Adding warmed milk directly to the chocolate and butter speeds up the melting process over the double boiler. It also helps keep the baked batter smooth, preventing the brownies from turning too stiff or dry.
- Adult Flavor Profile: Soaking the dried cranberries in rum adds a subtle, sophisticated aroma that complements the deep cocoa flavor without being overwhelming.
- Textural Variety: The crunch of roasted walnuts and crisp almond slices works in harmony with the chewy, rum-infused berries, making every bite interesting.
Brownie vs. Gateau Chocolat
People often confuse brownies with Gateau Chocolat. While Gateau Chocolat is traditionally baked in a round pan and uses whipped meringue for lightness, brownies are baked in a square pan and use whole eggs, making them much simpler to prepare.
Originally created to be enjoyed by hand without a fork or knife, brownies are wonderful for everyday afternoon tea or casual hospitality. Pair a square with a hot cup of black coffee for the best experience.

Chocolate Brownie Recipe
Prep Work
- Preheat oven: Preheat your oven to 170°C (338°F).
- Eggs: Cold eggs can hinder the cake from rising properly. Take the eggs out of the refrigerator a few hours in advance. If short on time, submerge them in warm water for about 1 minute.
- Sift dry ingredients: Sift together the cake flour and cocoa powder.
- Soak fruit: Soak the dried cranberries in the rum.
- Warm milk: Heat the milk in the microwave for 20 seconds.
Instructions
- Place the chocolate, unsalted butter, and warmed milk into a heatproof bowl. Set the bowl over a pot/container of hot water (double boiler method) to melt the mixture completely.
- Once the chocolate and butter are fully melted, add the sugar and mix thoroughly.
- Gradually add the beaten eggs in two additions, mixing well after each addition.
- Fold in the sifted cake flour and cocoa powder using a rubber spatula, gently scooping from the bottom until just combined.
- Fold in the walnuts and rum-soaked cranberries. (Toasting the walnuts in the oven for a few minutes beforehand enhances their flavor.)
- Pour the batter into the prepared square baking pan and scatter the sliced almonds evenly over the top.
- Place the pan on the middle rack of the oven and bake for 25 minutes.
- Allow the brownie to cool completely before removing it from the pan.
