What the kind of dish is Bibim noodles??

This is a Japanese version of Korean cold and spicy noodles dish.

There are two famous Naengmyeon (cold noodles) in Korea.

One is Pyongyang Naengmyeon and the other is Hamhung Naengmyeon. Pyongyang and Hamhung are the names of regions in Korea.

Pyongyang Naengmyeon is made of thin noodles made of buckwheat flour and potato starch in a refreshing cold soup.

On the other hand, Hamhung Naengmyeon has no soup, and is served with yangnyeomjang (sweet and spicy sauce) on top of the noodles or mixed with them.

And these name of the dish is {Korean bibim guksu}. Bibim means to mix, and guksu means noodles.

Boiled eggs, meat, cucumber, pear, and other ingredients are often used as toppings.

In the original, they use unique noodles made mainly from potato or sweet potato starch, but since these are difficult to obtain in Japan, somen, udon, or Chinese noodles are used instead.

What kind of food is Gochujang??

Gochujang is a spicy and sweet miso paste that originated in the Korean Peninsula. It is a fermented seasoning made by saccharifying rice or glutinous rice with koji, adding chili peppers and maturing. This miso is sticky and red in color.

It can be used for a variety of purposes, such as dipping vegetables and using it as a seasoning for stir-fried or simmered dishes.

INGREDIENTS for Japanese style bibim guksu (Korean cold and spicy noodles)

  • chicken breast 30g
  • sake 20g
  • 1/2egg
  • cucumber 20g
  • ☆gochujang 20g
  • ☆soy sauce 8g
  • ☆vinegar 8g
  • ☆sugar 4g
  • ☆grated garlic 3g
  • ☆sesame oil 3g
  • somen 75g
  • white sesame seeds 3g

Japanese style bibim guksu (Korean cold and spicy noodles) COOKING INSTRUCTIONS

➀ Place the chicken breast in a heat-resistant plate and sprinkle with sake. Softly wrap and heat in the microwave for 2 minutes, cool and loosen.

② Boil the eggs in hot water for 7 minutes.

③ Cut the cucumber into strips.

④ Mix gochujang, soy sauce, vinegar, sugar, grated garlic and sesame oil.

⑤ Boil the somen noodles for one and a half minutes and rinse with cold water.

Rinsing somen with water is an important step. This will prevent the noodles from sticking together.

⑥ Mix the drained somen noodles with the sauce.

⑦ Put chicken breast, egg and cucumber on somen noodles and sprinkle with white sesame seeds.
