Atsuage (厚揚げ)

What kind of food is Atsuage??

“Atsuage” and “aburaage” are both fried tofu.

Tofu, which is made from soybeans, is known as a very healthy ingredient.

Atsuage (thick fried tofu) has a moderate amount of oil and a faintly fragrant aroma.

Atsuage (thick deep fried tofu) is made by frying the tofu on the surface to add flavor, while the center retains the texture of tofu.

Aburaage (thin deep fried tofu) is perfectly cooked inside.

Both can be used as ingredients for simmered or stir-fried dishes.

Atsuage (thick fried tofu) is stronger than tofu, so it doesn’t lose its shape easily, is easy to use in stir-fries and simmered dishes, and absorbs flavors easily.

It is a recommended food for vegetarians and vegans as a valuable source of protein.

Surprisingly, it goes well with chili sauce and cheese.

Be sure to always stock your refrigerator with ”atsuage”, an excellent and inexpensive ingredient‼

Atsuage, which uses silken tofu as a raw material, is called “kinuatsuage”.

For this recipe, you can choose either regular atsuage or kinuatsuage.

I always use Kinu Atsuage because I like its soft and chewy texture.

In Japan, there is a dish called agedashi dofu (fried tofu in dashi soup). This is a dish in which the surface of tofu is coated with potato starch and then fried. Therefore, agedashi dofu (fried tofu in dashi soup) is different from Atsuage (thick fried tofu).
