オムライス(omurice)

What kind of dish is omurice??

Omurice is a combination of the words Omelet and Rice. It is a dish of rice seasoned with ketchup wrapped in an egg.

It has evolved into “omusoba,” which is wrapped in yakisoba, “omuchahan,”which is wrapped in fried rice, and “omuhayashi,”which is made by pouring demi-glace sauce over omurice.

This is my favorite menu since I was a child. As an adult I eat it with Tabasco. Recipes that use lots of eggs have become popular these days, but my recipe is an old-fashioned omurice wrapped in thin eggs.

It’s difficult to wrap rice in eggs. But this recipe uses plastic wrap, so anyone can do it.

INGREDIENTS (2SERVINGS)

★chicken rice

  • steamed rice 330g
  • chicken 50g
  • carrot 50g
  • onion 50g
  • butter 5g
  • garlic 5g
  • ☆salt 1g
  • ☆pepper moderate amount
  • ☆consommé 2.5g
  • ☆ketchup 50g
  • ☆Worcestershire sauce 3g

★omelet rice

  • 4eggs
  • low-fat fresh cream 40g
  • mayonnaise 4g
  • salt 2g
  • pepper moderate amount
  • butter 20g
  • ketchup 8g
  • parsley 1g

COOKING INSTRUCTIONS

★chicken rice

① Mix salt, pepper, consommé, ketchup and Worcestershire sauce.

② Cut the chicken into 1 cm squares.

③ Coarsely chop the carrots and onions.

④ Fry chicken and butter.

⑤ Add garlic and carrot onion and fry.

⑥ Turn off the heat, add the rice, and loosen the rice. (Please use warm rice.)

⑦ Mix seasoning in two batches. Be careful not to burn it on medium heat.

★omelet rice

① Mix the egg, fresh cream, mayonnaise, salt and pepper well with a whisk.

② Heat the frying pan and melt the butter.

③ Turn the heat to high and add the beaten egg.

④ Make a soft-boiled thin egg.

⑤ Put the egg on the plastic wrap.

⑥ Put chicken rice on top.

⑦ Adjust the shape of the omelet rice.

⑧ Garnish with ketchup and parsley
