It is made using the pasta filata method, in which lactic acid bacteria or enzymes are added to milk to coagulate it, then boiling water is poured over it to knead it, and the cheese is torn and shaped.

Originally made from the milk of buffaloes raised in southern Italy, in Japan it is made using milk that can be produced stably.

In this recipe, the pizza dough is made in a bread maker.

The home bakery (bread making machine) that I use is the “Compact Home Bakery IBM-010-C”.

The bread maker’s pizza dough mode is used for kneading and the first rise.

The difference between the manufacturing process of pizza dough and bread dough is the rise time.

Bread dough requires a second rise, but pizza dough only requires the first rise.

Also, the first rise time for pizza is slightly shorter than for bread.

With the home bakery I use, it takes me 1 hour and 45 minutes to make pizza dough.

Pizza dough

  • ☆Water (110g)
  • ☆Milk (70g)
  • Strong flour (280g)
  • Sugar (8g)
  • Salt (4g)
  • Olive oil (20g)
  • ★Dry yeast (3g)

Tomato sauce

  • Onion (50g)
  • Garlic (5g)
  • Chili pepper (1piece)
  • Olive oil (5g)
  • Canned tomatoes (200g)
  • Salt (2g)
  • Sugar (1g)
  • Dried basil (0.5g)

Topping

  • Mozzarella cheese (200g)
  • Basil (8g)
  • Olive oil (3g)

How to make Pizza Margherita

Pizza dough

  1. Put water and milk into a home bread machine
  2. Add strong flour
  3. Add sugar, salt, and olive oil to the four corners
  4. Make a well in the center and add dry yeast
  5. Set to pizza baking mode. (The pizza baking mode is for kneading and the first rise)

Tomato sauce

  1. Finely chop the onion and garlic
  2. Add olive oil, onion, garlic, and chili pepper to a frying pan and fry.
  3. When the onion is soft, add the can of tomatoes and simmer over low heat. (I use canned grated tomatoes. If you use whole tomatoes, roughly crush them before using.)
  4. Add salt, sugar, and dried basil and fry.
  5. When most of the moisture has evaporated, turn off the heat.
  6. Put the tomato sauce on a plate and let it cool in the refrigerator.

Molding&Baking

  1. Preheat the oven to 300°C.
  2. Divide the mozzarella into 6 portions. The mozzarella will release moisture, so it’s a good idea to wrap it in a paper towel for a little while.
  3. Divide the pizza dough into 2 pieces.
  4. After re-rolling the pizza dough, place a tightly wrung-out kitchen towel on top and let sit for 15 minutes.
  5. Place a small amount of strong flour on a parchment sheet and place the dough on it.
  6. Dust the surface of the dough with strong flour and press it down with the palm of your hand.
  7. Roll it out into a circle using a rolling pin.
  8. Transfer the parchment sheet to a baking tray.
  9. Spread the tomato sauce on.
  10. Place the mozzarella on top of the tomato sauce.
  11. Place baking trays on the top and bottom racks of the oven.
  12. Reduce the oven temperature to 250° and bake for 15 minutes.
  13. Place washed and dried basil on top.
  14. A drizzle of olive oil will make it even more delicious.
