- Herbs: Dried Basil (or fresh basil for an even better aroma!)

- Chicken Thighs: 900g
- Aromatics: 10g Grated Garlic
- Cooking Oil: 8g Olive Oil
- Seasoning: 8g Salt, Black Pepper (to taste)
Cooking Instructions
Step 1: The Tomato Sauce
- Heat olive oil in a saucepan over medium heat.
- Add the finely chopped onion, garlic, and chili pepper. Sauté until the onions are soft and translucent.
- Pour in the canned tomatoes. Add salt, pepper, sugar, and dried basil.
- Simmer until the sauce begins to bubble and thicken slightly. Set aside.
Step 2: The Chicken Steak
- Prep: Poke several holes in the chicken skin with a fork. Trim off excess fat and tendons.
- Season: Rub both sides of the chicken thoroughly with grated garlic, salt, and pepper.
- Sear: Heat olive oil in a frying pan. Place the chicken skin-side down.
- Press: Place a sheet of parchment paper over the chicken, then set a heat-resistant plate or heavy pot on top as a weight. This flattens the chicken for a perfectly even sear.
- Flip: Once the skin is deep golden brown and crispy, remove the weight and flip the chicken.
- Side Dishes: Use the extra space in the pan to sauté your favorite vegetables while the chicken finishes cooking.
- Serve: Slice the chicken into bite-sized pieces, plate them, and pour a generous amount of your signature tomato sauce over the top.
