While it is a staple for everyday meals, it is also an indispensable part of Osechi Ryori (Japanese New Year food). Because burdock roots grow deep into the earth, this dish symbolizes stability and long-lasting prosperity for the family.
Why “Tataki”?
The word tataki means “pounded” or “hit” in Japanese. We lightly smash the burdock fibers with a rolling pin or mallet before marinating. This process loosens the dense fibers, allowing the savory sesame dressing to permeate the root more deeply.

- Don’t peel completely: Most of the aroma and beneficial polyphenols are in the skin. Use the back of a knife to gently scrape the surface rather than peeling it away.

- Light soy sauce (Usukuchi): 8 g

- Toppings:
- Toasted white sesame seeds: 5 g
- Ground white sesame seeds: 10 g
INSTRUCTIONS



- Prep the Burdock: Scrape the skin of the burdock root lightly using the back of a knife. Cut into 4 cm lengths. Slice thicker pieces in half or thirds lengthwise so they are uniform.
- Soak: Immediately place the cut burdock in a bowl of water to prevent discoloration.
- Boil: Bring 300 g of water and 6 g of vinegar to a boil. Add the burdock and cook for 4 minutes. Aim for a “tender-crisp” texture—be careful not to overcook it!
- Prepare the Dressing: In a microwave-safe bowl, combine the ingredients marked (☆). Heat in the microwave for 20 seconds to dissolve the sugar.
- Marinate: Drain the burdock thoroughly. While it is still warm, toss it with the dressing. Working quickly while the vegetable is warm helps it absorb the flavors.
- Rest: Allow it to marinate in the refrigerator overnight for the best flavor.
- Finish: Just before serving, mix in both the whole and ground sesame seeds.
Pro Tip: For New Year’s celebrations, try to cut all pieces to the exact same length and arrange them neatly in a stack to represent order and beauty.
