This potato salad is made with plenty of potatoes (jagaimo) and onions (tamanegi) harvested in spring.
Other standard ingredients include bacon, eggs and mayonnaise, with a touch of mustard added for flavor.
Potatoes and onions harvested in spring are called “shin jaga” and “shin tama” in Japan. “Shin” means “new”.
Shin jaga have thin skin and can be eaten as is. Whether or not to peel them is a matter of personal preference.
Shin tama have little spiciness and a strong sweetness, so they can be eaten raw.
However, salads containing raw onions and cucumbers spoil easily, so consume them quickly.
Potato salad is surprisingly time-consuming. That’s why I only make it in the spring. It’s a one-season treat.
I recommend using Danshaku potatoes, which have a nice texture.

Springtime simple potato salad recipe COOKING INSTRUCTIONS
- Put the eggs in boiling water, boil for 12 minutes, and peel. (When making boiled eggs, it is easier to peel the shells if you use cold eggs.)
- Slice the cucumber into 2mm slices, rub in salt, leave for 10 minutes, and then squeeze out the water.
- Peel the potatoes and cut them into large pieces. Boil or steam the potatoes. (I like the texture of steamed potatoes. You can also heat them in the microwave, but I feel they tend to dry out.)
- Cut the carrots into chrysanthemum-shaped slices and boil for 3 minutes.
- Slice the onion into 2mm slices, soak in water for 5 minutes, then squeeze.
- Cut the bacon into 2cm slices and fry in a frying pan.
- Mash the potatoes and eggs with a fork. It’s fine if some lumps remain.
- Mix with the eggs, cucumber, potatoes, carrots, onions, and bacon.
