What kind of dish is Porkchup??

“Porkchup” is one of the sautéed pork dishes, and it is characterized by being seasoned with ketchup. It is a coined word of pork and ketchup.

In Japan, pork is sold cut according to the purpose. This dish usually uses pork loin sliced about 2 mm thick. The name of this meat is “shouga yaki you =生姜焼き用”. But I prefer the cheaper, softer meat called ‘こま切れ=komagire’ or ‘切り落とし=kiriotoshi’.

Komagire and kiriotoshi are meat left over from the production of sliced meat. Kiriotoshi is a relatively large piece of meat with only one type of part. Komagire is a small piece and various parts are mixed.

The ketchup flavor is popular with people of all ages, and it goes well with both rice and bread.

INGREDIENTS(5SERVINGS)

  • onion 300g
  • pork shoulder loin “kiriotoshi” 450g
  • salt 3g
  • oil 4g
  • wheat flour (cooking flour) 9g
  • ☆Worcester sauce 25g
  • ☆ketchup 100g
  • ☆soy sauce 5g
  • ☆sugar 2g
  • ☆pepper moderate amount

COOKNG INSTRUCTIONS

➀ Slice the onion. Put it in a heat-resistant container, wrap it loosely and heat it in the microwave for 3 minutes.

② Grill the pork shoulder loin in the pan. Spread the meat as flat as possible and place it in the frying pan. Turn off the heat when the meat changes color.

③ Put the onions in a frying pan and stir-fry until most of the water evaporates.

④ Sprinkle salt and wheat flour (cooking flour) evenly and mix the whole thing.

⑤Add Worcestershire sauce, ketchup, soy sauce sugar and pepper and fry.

In order to bring out the beautiful red color of ketchup, we do not use liquids such as alcohol.
