About the history of sweet potato

Sweet potatoes were introduced from China to Ryukyu (now Okinawa Prefecture) in the Edo period, then to Satsuma (now Kagoshima Prefecture), and spread all over Japan. This is the origin of the word satsuma imo.

The land in Satsuma was unsuitable for rice cultivation because it was prone to dryness and typhoon damage. Instead of rice cultivation, the cultivation of sweet potatoes was popular. During the great famine of 1870, Satsuma, which had encouraged the production of sweet potatoes, had few starvation deaths. As a result, Yoshimune Tokugawa, the 8th shogun who served as a model for Abarenbo Shogun, ordered the cultivation of sweet potatoes nationwide.

As an aside, it is said that people in Satsuma at that time also ate meat, which was prohibited in the capital. Perhaps for this reason, many people in Satsuma were relatively large for Japanese people at the time. Takamori Saigo and Toshimichi Okubo were said to have been about 180cm tall.

I thought that people’s physiques were gradually getting bigger due to the westernization of eating habits, but I was impressed that the influence of food was unexpectedly immediate. As a nutritionist, this is an interesting story.


The synergistic effect of dietary fiber and yalapin, which are components of sweet potatoes, can be expected to improve constipation. Potatoes and pumpkins contain a lot of carbohydrates. The vitamin C contained in these foods is characterized by little loss even when heated.

HOW TO COOK Sweet potato and apple compote

➀ Cut the sweet potato into bite-sized pieces and soak in water for 5 minutes.

※Soaking in water is to remove the lye. You can prevent discoloration of sweet potatoes by removing Lye. In addition, sweet potato skins are rich in anthocyanins, calcium, and dietary fiber. To maximize its effectiveness, use it without peeling the skin. Please wash carefully before use.

② Apples are peeled and cut into bite-sized pieces. Remove apple skins, as they discolor easily and have an unpleasant texture.

③ Add enough water to cover the sweet potatoes and apples and bring to a simmer over medium heat.

④ When the sweet potato becomes soft enough to eat, add raisins, sugar and lemon juice and simmer.

⑤ It’s done when the water is almost gone.
