What kind of dish is Karaage??
“Karaage” is a dish of chicken marinated in garlic and soy sauce and fried in oil. It is no exaggeration to say that karaage is a national dish of Japan.
Freshly made hot and juicy is exceptionally delicious! !
However, it is delicious even when it is cold because the flavor is soaked in.
Many people are happy when they find fried chicken in their lunchbox. It is a standard menu item for both home cooking and izakaya snacks. (Izakaya is a restaurant where you can drink alcohol.) At an izakaya, it is a good idea to order the combination of beer and fried chicken first.
Karaage is also recommended as a topping for curry or salad. There are various arrangements, such as adding yuzu pepper to the seasoning, or pickling it in a seasoning called shiro-dashi.
In Japan, chicken thighs are preferred, but you can also use chicken breast or chicken wings.

- sake 20g
- garlic 5g
- ginger 5g
- flour 20g
- oil 40g

Karaage recipe COOKING INSTRUCTIONS
➀ Cut the chicken thigh into about 35g.
② Grate garlic and ginger.
③ Place the chicken thighs in a plastic bag with soy sauce, sake, garlic, and ginger and wait for 6 to 8 hours.
④ Add the flour to the plastic bag and knead it.
⑤ Fry in oil heated to 160℃ for 5 minutes and 180℃ for 3 minutes.
⑥ Put it on a wire mesh and cut off the oil.
⋈*If you like, cover the surface with 20g of potato starch when frying to make the fried texture crisp. If soy sauce and potato starch are used, it is sometimes called Tatsutaage.
