Hayashi rice(ハヤシライス)

What kind of dish is Hayashi rice??

Hayashi rice is a dish in which beef and onions are simmered with demi-glace sauce, red wine, and tomato puree and served over rice.

It is one of the Western dishes that developed uniquely in Japan, like omelet rice and tonkatsu. It looks similar to curry, but it is not spicy because no spices are used.

Demi-glace sauce is rarely found in households, so I adapted my recipe so that you can make it with ingredients you already have at home.

In recent years, many types of instant solid roux and retort food have become commercially available.

You can feel the sourness of the tomatoes and the richness of the beef. Please give it a try!

Brown roux (flour stir-fried in butter until brown and cooled) and fond de veau (soup made by simmering veal, onions, carrots, and celery) are combined and boiled, then wine and harb are added.

Only a small amount of flour (roux) is used because the natural gelatin and salt in the calf’s body give it a thick and salty taste when boiled down.

Demi-glace sauce takes a lot of time and effort to make in earnest.Therefore, many hayashi rice and beef stew recipes use canned demi-glace sauce.

About hashed beef/beef stroganoff

Hashed beef means “meat cut into small pieces.” Demi-glace sauce is not used in hashed beef, which has been made in the West since before the 19th century.

Although they have the same name, Western and Japanese hashed beef are actually completely different.

In Japan, hayashi rice is treated almost the same as hashed beef. Japanese people think that hashed beef only has demi-glace sauce, and hayashi rice has tomato sauce added to it.

Beef stroganoff is a national dish of Russia and Ukraine. Stir-fry beef, onions, and mushrooms and simmer with milk and sour cream.

In Japan, sour cream is difficult to obtain, so demi-glace sauce is often added. For this reason, even beef stroganoff is treated almost the same as hashed beef and hayashi rice.

Beef Stew

The ingredients for hayashi rice and hashed beef are basically thinly sliced onions and beef, while beef stew uses carrots and potatoes. We also use relatively large chunks of beef.

This is not served over rice, but as a main dish.

INGREDIENTS (About 4SERVINGS)

  • onions 400g
  • butter 10g
  • beef belly 250g
  • salt 2g
  • pepper appropriate amount
  • flour 20g
  • Worcestershire sauce 25g
  • ketchup 100g
  • red wine 100g
  • canned tomatoes 200g
  • water 300g
  • sugar 4g
  • 2 bay leaves
  • rice In the amount of your choice

COOKING INSTRUCTIONS

① Slice onions thinly and fry in butter. When it turns a light brown color, remove it to a plate.

② Stir-fry the beef belly and season with salt and pepper.

③ Return the onions to the pot.

④ Sprinkle flour all over and stir-fry.

⑤ Add Worcestershire sauce, ketchup, red wine, canned tomatoes, water, sugar, and bay leaves and simmer for 20 minutes.

⑥ Pour over cooked rice.
