I boiled sardines, plums and ginger in soy sauce. It’s a sweet and salty flavor with impact. (You can use same amount of seasoning even though you make it double the amount of fish.)

INGREDIENTS

  • sardines 200g(amount of after removed head and internal organs)
  • soy sauce 30g
  • sugar 15g
  • mirin 15g
  • sake 30g
  • water 300g
  • ginger 5g
  • 2pickled plums (about 10g)

COOKING INSTRUCTIONS

➀ If the fish has internal organs, remove the head and make an incision in the belly.

② Remove internal organs and wash thoroughly.

③ Wipe off the water from the sardines with kitchen paper.

④ Cut into thin strips the ginger and remove the pickled plums seeds.

⑤ Put the sardines, soy sauce, sugar, mirin, sake, water, ginger, and pickled plumand in a pressure cooker.

⑥ Pressurize for 30 minutes.

Be careful not to lose moisture while pressing. Heat over high heat until pressure builds. Reduce the heat after that. Keep a low hissing sound.

⑦ Once the pressure is released, open the lid and boil down.
