When making niku miso, it is better to use red miso. The red miso that I always use is Fundokin’s “Ofukuro Akamiso”. The scent is not too strong, so it is easy to match with various dishes.

  • Main Components:
    • Soft Tofu: 480g
    • Minced Pork: 300g (can substitute chicken or a beef/pork mix)
    • Aromatics: Garlic (5g), Ginger (5g), Chili pepper (1g)
    • Oil: Sesame oil (3g)
    • Garnish: Chopped green onions (10g)
  • ☆ The Seasoning Sauce:
    • Red Miso: 30g (Red miso provides a deep richness/umami)
    • Gochujang: 5g (Adds a sweet-spicy Korean flair)
    • Soy Sauce: 10g
    • Sugar: 20g
    • Sake: 10g
    • Water: 80g
  • ★ Thickener:
    • Potato Starch: 3g (dissolved in 40g water)

🍳 How to make Tofu Topped With Nikumiso (Meat Miso)

  • Prep Aromatics: Finely chop (or grate) the garlic and ginger.
  • Sauté: Heat sesame oil in a pan. Fry the minced pork, garlic, ginger, and chili pepper until the meat is browned and fragrant.
  • Simmer: Add all the ☆ seasoning sauce ingredients (miso, gochujang, soy sauce, sugar, sake, and water). Mix everything well and heat over medium heat.
  • Thicken: Once boiling, turn off the heat briefly. Pour in the ★ potato starch slurry. Turn the heat back on and stir until the sauce reaches a glossy, thick consistency.
