What kind of dish is Gapao rice??
Gapao rice is one of the most popular Thai dishes in Japan.
In Thai, gapao is written as “ผัด กะเพรา” and means stir-fried dish with basil.
Gapao = Phat kaphrao = gaprao = ผัด กะเพรา = basil stir-fry
The recipe is very simple: stir-fry chili peppers, garlic, and minced meat over high heat, then season with fish sauce(nam pla) and sugar.
In Japan, chicken and pork are commonly used, but in Thailand, seafood is also used.
The most important ingredient in gapao rice is holy basil. Holy basil is not available in Japan, so sweet basil is used instead.
Therefore, the gapao rice eaten in Japan is slightly different from the authentic Thai gapao rice.

Fish sauce (Thai: น้ำปลา, nam pla) is an essential seasoning for Thai cuisine. Nam means liquid and pla means fish.
Nam pla is a seasoning similar to Japanese 魚醤, and is a liquid made by fermenting salted raw fish.
It is a condensation of the delicious ingredients found in fish, and is characterized by its salty taste and unique aroma.

- Bell pepper (paprika) 40g
- Zucchini 40g
- Eggplant 40g
- Garlic 8g
- Bean sauce 3g
- Sesame Oil 5g
- Minced pork 200g
- ☆Fish sauce (nam pla) 10g

In Japan, bell peppers are divided into piman and paprika. Piman is a small variety weighing about 40g each, and is basically eaten by heating it. Piman are typically green, but there are also colored piman, such as red and orange. Paprika are large varieties, the size of a fist, and can be eaten raw. Paprika is slightly sweet and fruity, and compared to piman, it is thicker but softer, and more expensive.
I use Japanese rice, but using Thai rice or jasmine rice will make it closer to authentic gapao rice.
Easy Japanese style Gapao Rice Recipe COOKING INSTRUCTIONS
- Remove the stems and seeds from the bell peppers.
- Cut off the tips of the zucchini and eggplant.
- Cut the peppers, zucchini and eggplant into 5mm cubes.
- Peel and slice the garlic
- Place garlic, bean sauce, and oil in a frying pan and heat over low heat.
- Add minced pork and fry until it changes color.
- Add the bell peppers, zucchini, and eggplant and stir-fry until the vegetables are soft.
- Add fish sauce, oyster sauce, chicken broth mix, sugar, and soy sauce and stir-fry for a short time.
- Finally, add the basil and immediately turn off the heat.
- Make fried eggs.
- Put gapao and fried egg on rice
- Sprinkle lime juice on top before eating.
