This dish consists of deep-fried tebanaka (chicken wings) mixed with amakara dare (a sauce made from soy sauce and sugar).

When I started making this dish, I had planned to save half of it for the next day, but I was thwarted. Once I start eating this chicken, I can’t stop!

What kind of food is tebanaka?

In Japan, chicken wings are called “Teba”.

Teba is divided into tebamoto and tebasaki. Tebamoto is the part at the base of the arm, and the tip is tebasaki.

The thick part of tebasaki is called tebanaka. Tebanaka is often sold cut in half at supermarkets.

Tebanaka has just the right amount of elasticity, and the delicious ingredients of the meat are concentrated around the bones.

What kind of sauce is amakara dare??

The flavor of the sauce made by boiling down soy sauce and sugar is called “amakara flavor.

“Ama” means “sweet” and “kara” means “salty”. “dare” is a word that refers to “sauce”.

When sugar is heated, a caramel reaction occurs, turning it into a viscous liquid. In addition, the amino acids contained in soy sauce combine with sugar to cause the Maillard reaction. These reactions give ingredients a delicious brown color and a fragrant aroma.

Teriyaki, a Japanese home-cooked dish, is also a dish that makes use of these reactions.

INGREDIENTS for Easy yet yummy!Tebanaka Karaage Recipe with amakara sauce (2SERVINGS)

  • Tebanaka 300g (Waste rate 45%)
    • Salt 2g
    • pepper moderate amount
  • Wheat Flour 8g
  • Oil 24g (Oil absorption rate 8%)
    • ☆Soy sauce 18g
    • ☆Mirin 15g
    • ☆Sake 15g
    • ☆Sugar 5g
    • ☆Water 30g
  • White sesame 2g

It’s best to use as much pepper as possible.

Tebanaka Karaage Recipe ( fried chicken wing) COOKING INSTRUCTIONS

  1. Wipe off any dirt or moisture from the surface of the tebanaka chicken wing with a paper towel.
  2. Rub salt and pepper into the tebanaka chicken wing leave it for about 10 minutes.
  3. Lightly sprinkle flour on the surface of the tebanaka chicken wing . I recommend using “cooking flour” which is less sticky!
  4. Heat oil to 170 degrees and fry the tebanaka chicken wing. (170 degrees is 338 degrees Fahrenheit)
  5. While the tebanaka chicken wing is frying, add soy sauce, sugar, mirin, sake, and water to a frying pan.
  6. Put the tebanaka karaage in the pan and heat over high heat.
  7. Turn off the heat when the tebanaka karaage is completely coated with the sauce.
  8. Sprinkle white sesame seeds on the tebanaka karaage.
How to make tebanaka karaage with amakara dare :In the video, I rub the chicken wings with grated garlic and soy sauce instead of salt and pepper, which is also a recommended version.
