Nyumen(にゅうめん)

What kind of dish is Nyumen??

A dish of somen noodles in a warm soup rich in the flavor of shiitake mushrooms.

Somen is a thin udon-like noodle made from wheat flour. Nyumen is a hot soup with somen noodles.
It is easy to eat even when you have no appetite. You can make a very delicious soup with shiitake mushrooms and chicken.

Dried shiitake mushrooms are a special product of Oita Prefecture. There are also thinly sliced ones, but this recipe uses the one called “Donko”. The flavor is completely different when you use this because you can get a strong and thick soup stock.

Tororo kombu is a food product made from kelp. It is made by pickling kelp in vinegar to soften it, hardening it, and then shaving it into thin threads.It is often used as an ingredient in rice balls and soups.

Kamaboko is a type of fish paste product made by shaping and heating minced fish meat.

INGREDIENTS

  • dried shiitake mushrooms 8g
  • chicken 100g
  • ☆soy sauce 8g
  • ☆sugar 4g
  • ☆water 100g
  • ★mixed water and shiitake mushroom reconstituted soup 200g
  • ★soy sauce 20g
  • ★mirin 15g
  • ★sake 5g
  • ★dashi stock granule 2g
  • somen 50g
  • green onion 40g
  • kamaboko 18g
  • tororo kombu 1g

COOKING INSTRUCTIONS

➀Soak the dried shiitake mushrooms in water to soften.

It takes time, so it’s good to put it on from the day before.

②Cut the chicken and dried shiitake mushrooms into an appropriate size and put them in a pot.Add soy sauce, sugar and water. Boil over medium heat until the water is gone.

③Boil the water and shiitake mushroom reconstituted soup, soy sauce, mirin, sake, and dashi stock granules.

④Put the somen in boiling water and boil for one and a half minutes. The boiled noodles use a colander to remove the water firmly.

⑤Cut the green onion into small pieces.

⑥Cut the kamaboko.

⑦Serve noodles and soup.

⑧Put chicken, shiitake mushrooms, green onion, kamaboko and tororo kombu.
