Tonteki(とんてき)
What kind of food is Tonteki??
“Tonteki” is a pork steak known as a specialty of Yokkaichi City, Mie Prefecture, Japan.
It is a stamina dish with black sauce using Worcestershire sauce etc. mixed with sautéed thick-sliced pork. This dish also called glove-yaki (grilled gloves) because the meat is sometimes cut into glove-like shapes. Garlic is often used and cabbage is commonly served as a side dish.
In Nagoya, there is a famous sauce company “Komi”. They sell tonteki sauce there.

This time, I created a recipe that anyone can easily make at home using Worcestershire sauce. Enjoy flavorful dishes made with plenty of Worcestershire sauce.
Side note: I heard that overseas Worcestershire sauce tastes quite different from Japan’s. I use Kagome’s Worcestershire sauce. 👉 https://www.kagome.co.jp/products/food/A9750/

☆*:.。.Classification by JAS standard
According to Japanese JAS standards, sauces are classified into three categories: Worcestershire sauce, Chuno sauce, and Noukou sauce. The classification criterion is viscosity.
*中濃ソース:Chuno Sauce
Chuno means medium viscosity, which is thicker than Worcestershire sauce. It is a taste that combines the taste of vegetables and fruits.
It is a versatile sauce that can be used for frying or as a secret ingredient in curry and meat sauce.
*濃厚ソース:Nouko sauce
Noukou means high viscosity. It’s even thicker than chuno sauce, and you can enjoy a solid taste. Due to its high viscosity, the batter of deep-fried food does not become watery, and the texture is easy to feel.
Therefore, this sauce has become a standard when eating tonkatsu, and many people call this tonkatsu sauce. It’s made with plenty of fruit and has a sweet taste with little acidity or spiciness, so it’s easy for children to eat.

*オイスターソース:Oyster sauce
It is an indispensable ingredient for Chinese cuisine such as “青椒肉絲” and “上海焼きそば”.The unique flavor and taste of oysters that cannot be tasted with other sauces is attractive.
