What kind of food is Tonteki??
“Tonteki” is a pork steak known as a specialty of Yokkaichi City, Mie Prefecture, Japan.
It is a stamina dish with black sauce using Worcestershire sauce etc. mixed with sautéed thick-sliced pork. This dish also called glove-yaki (grilled gloves) because the meat is sometimes cut into glove-like shapes. Garlic is often used and cabbage is commonly served as a side dish.
In Nagoya, there is a famous sauce company “Komi”. They sell tonteki sauce there.

This time, I created a recipe that anyone can easily make at home using Worcestershire sauce. Enjoy flavorful dishes made with plenty of Worcestershire sauce.

INGREDIENTS : Tonteki (Pork Steak Unique Sour Sauce) (2SERVINGS)

- ☆Worcestershire sauce 35g
- ☆Soy sauce 5g
- ☆Ketchup 5g
- ☆Vinegar 5g
- ☆Sugar 4g
- Pork loin (Tonkatsu meat) 200g
- Salt 1g
- Wheat flour (Cooking flour) 9g
- Oil 4g
- Garlic 16g
How to make Tonteki (Pork Steak Unique Sour Sauce)
- Combine Worcestershire sauce, soy sauce, ketchup, vinegar, and sugar.
- Wrap the pork loin with a paper towel and wipe off the moisture.
- Make an incision in the meat before rubbing in the salt. (See video) It is also good to cut it into larger pieces as shown in the photo below.
- Sprinkle flour thinly. Shake off excess powder.
- Stir-fry garlic with oil.
- When the smell of garlic comes out, put the meat in a frying pan and grill both sides.
- When it is browned, mix the sauce.
- Bring to a boil over medium heat.
