Salmon Meuniere, a classic fish dish, topped with a sauce made from cream cheese.

Meuniere is flour-coated fish baked in butter. By coating flour, the outflow of flavor is suppressed. In addition, the evaporation of moisture from the fish is suppressed, making it moist and tender.

Flounder, Spanish mackerel, sea bass, and horse mackerel are also often used instead of salmon.
This recipe use silver salmon. Silver salmon is characterized by its soft flesh and rich fat. If using salted salmon, use basil or parsley instead of herb salt.

  • milk 40g
  • low-fat fresh cream 40g
  • water 40g
  • pepper moderate amount
  • silver salmon(=Coho salmon) 2piece160g
  • herbal salt 2g
  • wheat flour (cooking flour) 10g
  • salted butter 10g
  • spinach 200g
  • salt 2g
  • pepper moderate amount
  • 3almonds

COOKING INSTRUCTIONS

➀ Put cream cheese, grated garlic, milk, fresh cream, water and pepper in a small pot and heat over low heat.

② If there is water on the surface of silver salmon, it will become sticky, so wipe it with kitchen paper. After that coat silver salmon with herb salt and flour.

It is recommended to use non-sticky “cooking flour.” Over time, the flour will absorb the moisture from the salmon and it will become sticky. Coat with flour just before baking.

③ Put the salted butter in a frying pan and heat it over low heat.

④ Place the silver salmon skin side down in the pan.

⑤ Cover and grill silver salmon over medium heat.

⑥ Wash the spinach and cut it into 4cm lengths.

⑦ Flip the silver salmon over and fry the spinach in the empty space.

⑧ Season the spinach with salt and pepper and arrange on a plate. 

⑨ When the silver salmon is cooked, place it on a plate and pour the cheese sauce over it.
