What kind of dish is Kamatama ramen??

This is a dish of boiled ramen (Chinese noodles) mixed with eggs. The rich egg sauce is delicious. 

Ramen is the most representative dish in Japan that uses Chinese noodles. In most cases, the noodles are served with soup, but in the “Kamatama” method, boiled noodles are mixed with raw eggs.

The biggest appeal of Chinese noodles is the seemingly endless variety of soups and toppings. In addition to standard dishes such as ramen and yakisoba, new ways of eating are also emerging, such as tsukemen and abura soba.

The cooking method called Kamatama was originally used for udon noodles, but now it has been used to make pasta and ramen.

The toppings for this recipe are simply green onions and nori, but mentaiko and bonito flakes also go well.I think it would be delicious to add some chopped chashu to it as well.

What kind of food is Chinese noodle??

Chinese noodles are made by kneading strong or medium-strength flour with kansui added. Kansui is an alkaline solution such as sodium carbonate that acts on the protein (gluten) in flour and promotes the shrinkage of noodles. This gives it a unique crunch.

Chinese noodles are yellow because the flavone pigments in the flour react with the alkali in kansui. However, kansui alone cannot produce a strong color, so bright yellow noodles often contain ingredients such as eggs and gardenias.

Types of Chinese noodles

Raw Chinese noodles

Noodles that have not been dried.The noodles are soft and lightly coated with flour. It is mainly eaten as ramen.

Boiled Chinese noodles and steamed Chinese noodles

It is sold in a plastic bag. Sometimes the surface is coated with a little oil to prevent the noodles from sticking. It’s cheap and easily available at supermarkets and convenience stores. It is often used for yakisoba.

Frozen Chinese noodles

This is boiled noodles that have been frozen. The texture and taste are very good. When you eat it, boil it or heat it in the microwave. You can feel the same deliciousness as raw noodles. You can get a wide variety of ready-to-eat meals such as ramen, yakisoba, and mazesoba.

Dried Chinese noodles

Because they are dry, they keep for a long time. It comes with powdered soup, so all you need for cooking is hot water. The price is low, so it’s perfect for stockpiling food.

INGREDIENTS (2SERVINGS)

  • cabbage 50g
  • steamed chinese noodles 2P(300g)
  • ☆soy sauce 5g
  • ☆mirin 5g
  • ☆chicken stock granules 1g
  • ☆sesame oil 2g
  • chili pepper 1g
  • 2egg yolk    
  • green onion 10g
  • seaweed 2g

COOKING INSTRUCTIONS

➀ Cut the cabbage into 2cm cubes.

② Boil the steamed chinese noodles and cabbage for 2 minutes. Drain thoroughly.

③ Mix soy sauce, mirin, chicken stock granules, and sesame oil.

④ Slice the chili pepper into rounds and add to the sauce.

⑤ Coat the noodles with the sauce.

⑥ Add the egg yolk and stir.

⑥ Put chopped green onions and seaweed on top.
