Karei no potato yaki(カレイのポテト焼き)

What kind of dish is karei no potato yaki??

I put mashed potatoes on the right eye flounder and roasted it in the oven. The fish has a neutral taste and goes well with creamy mashed potatoes.

The garnish is spaghetti, zucchini, and shimeji mushrooms sautéed and seasoned with salt and pepper.

What is right eye flounder? ?

Righteye flounder is a white-fleshed fish with soft flesh, and it’s a familiar fish that can be eaten all year round. It can be cooked in a variety of ways, such as sashimi, boiled, fried, and salt-grilled.

Righteye flounder is called “カレイ = Karei” in Japanese. This time, I used a variety called Kogane Karei.

The variety that has a large distribution volume nationwide and is available all year round is “Magarei”. In general, speaking of karei, it often refers to “Magarei”. Those caught from winter to spring have eggs and are said to be particularly delicious. This is called “komochi righteye flounder”.

What is the difference between karei and hirame? ?

There is a fish that looks like a righteye flounder called bastard halibut(lefteye flounder). This is a fish called “hirame” in Japanese.

When placed with the belly facing forward, the bastard halibut(lefteye flounder) has its head on the left side. In comparison, the lighteye flounder’s head is on the right.

Both right-eye flounder and left-eye flounder are classified as fish belonging to the suborder Flatfish.

There are many types, and the distinction between the two is ambiguous, and it may not be possible to tell based on their name or the direction of their eyes.

They can also be distinguished by the shape of their mouths.

The bastard halibut(lefteye flounder) hides on the ocean floor and preys on small fish such as sardines and horse mackerel. As a result, their mouths are very large and full of teeth, and their flesh is firm. It is often used in sashimi, sushi, meuniere , etc.

On the other hand, righteye flounders do not prey on food, and their main diet is small shrimp, so their mouths are small and their teeth are not developed.The flesh is fatty and soft. Suitable for boiling or deep-frying.

INGREDIENTS (3SERVINGS)

  • righteye flounder 3slices 210g
  • salt 2g
  • potatoes 100g
  • ☆ mayonnaise 25g
  • ☆ light soy sauce 2.5g
  • ☆ milk 15g
  • ☆ grain mustard 5g
  • ☆ salt 0.5g
  • ☆ pepper moderate amount

COOKING INSTRUCTIONS

➀ Sprinkle the righteye flounder with salt.

② Boil the peeled potatoes until soft.

③ Mash the potatoes with a fork while they are still hot.

④ Mix half calorie mayonnaise, light soy sauce, milk, grain mustard, salt and pepper with mashed potatoes.

※Add milk little by little to avoid making the mashed potatoes too soft.

⑤ Put the mash potatoes in a piping bag and squeeze them over the fish. If you don’t have a piping bag, put it on with a spoon and then use a fork to make lines.

⑥ Roast in the middle shelf of the oven preheated to 230°C for 20 minutes.
