Shortbread(ショートブレッド)

What kind of dish is Shortbread??

A cookie made with simple ingredients: flour, sugar, and butter. It is characterized by its crisp texture and slightly salty taste.

I added almond powder this time, but if you don’t have it, use 180g of flour.

You can make about 24 cookies.
It’s also good to wrap it up and make it a little gift.

Shortbread is not very familiar in Japan, but it is similar to Honolulu cookies, a standard souvenir from Hawaii.

Shortbread is not very familiar in Japan, but many people have probably eaten Honolulu cookies, which are a staple souvenir from Hawaii, and Walker’s shortbread.

Shortbread is a traditional sweet from England and Scotland. The difference from regular cookies is that they do not contain eggs.

Enjoy a stylish tea time with tea or coffee (*˘︶˘♡)。.:*☆

INGREDIENTS

  • unsalted butter 100g ⋈*When using salted butter, use 0.5g of salt.
  • sugar 60g
  • flour 160g
  • almond flour 20g
  • salt 2g

COOKING INSTRUCTIONS

➀ Place unsalted butter, sugar, flour, salt and vanilla extract in a food processor.

② Make the dough like bread crumbs.

③ Wrap it up and put it in the refrigerator overnight. Try not to knead the dough as much as possible, as gluten will form when you knead the dough.

④ Roll out the dough to a thickness of 1 cm.
Regular cookies are 5mm, so they are a little thicker.

⑤ Cut into 2cm x 5cm rectangles or cut out with cookie cutters.

⑥ Arrange the cookies on the baking sheet. It will puff up a little when baked. Make space between the cookies.

⑦ Place in the refrigerator for 1 hour to cool. The dough will not sag easily by cooling.

⑧ Bake for 20 minutes in the middle rack of an oven preheated to 170°C. (170 degrees Celsius is 338 degrees Fahrenheit.)

⋈*If the thickness of the dough is 5mm, the baking time is 15 minutes.

⑨ Allow to cool completely.

MEMO

⋈*The oven I use is Toshiba’s “Ishigama Dome”. I like that it won’t break even after 10 years of use and is easy to clean.
