Chicken persillade(チキンペルシヤード)
What kind of dish is Chicken persillade⁇
Garlic and parsley mixed with bread crumbs and oil, sprinkled on chicken and grilled.You can also make it delicious with horse mackerel or lamb meat instead of chicken.
It has a crispy texture and a wonderful aroma.
I always have leftover parsley, so when I want to use a lot of it, I make persillade.
Since it is coated with mayonnaise, the bread crumbs adhere to it. Since it is baked in the oven, there is no need to worry about the bread crumbs coming off.
Calorie content is much lower than fried food. Easy and healthy, this is why I love oven cooking.

INGREDIENTS for Chicken persillade (2servings)
- chicken thigh 300g
- salt 3g
- pepper moderate amount
- grated garlic 7g
- half calorie mayonnaise 12g
- bread crumbs 20g
- oil 5g
- parsley 8g
Chicken persillade COOKING INSTRUCTIONS
➀ Remove excess fat from chicken thighs.
② Use a fork to poke several holes in the chicken skin.
③ Rub the chicken with salt, pepper and garlic.
④ Spread mayonnaise on chicken thigh skin. (If you want to reduce calories, remove the skin.)
⑤ Mix bread crumbs and oil. Be conscious so that the oil will be evenly distributed.
⑥ Mix the chopped parsley into the bread crumbs.
Wash the parsley and shake to remove moisture. You can also gently wrap it in a paper towel and wipe it dry. Do not squeeze the leaves too hard as this will make them soggy.
⑦ Coat the chicken thighs with breadcrumbs. Sprinkle bread crumbs and press lightly on top.
⑧ Bake in an oven preheated to 230°C for 25 minutes. (230 degrees Celsius is 446 degrees Fahrenheit.)
After baking for 10 minutes, if it looks good browned, cover it with aluminum foil.
