In Japan, a standard Hambagu is made with Aibiki mince (a 7:3 blend of ground beef and pork) mixed with onions, panko, and eggs. By replacing some of the meat with Momen (firm) tofu, you get a much lighter version that’s lower in calories and fat, but still super satisfying!

My Golden Ratio: 300g meat to 150g tofu. This maintains that rich, meaty flavor while keeping the patty incredibly fluffy.

🙌 Pro-Tips for Success

Drain the Tofu: This is the secret to a perfect texture. Wrap in paper towels and press with a weight for one hour, or use the microwave for a quick zap (just don’t over-dry it!).

The Onion “Microwave Hack”: Instead of sautéing, microwave chopped onions for 2 minutes and squeeze out the moisture. It saves time and extra washing up!

  • Onion: 50g (finely chopped)
  • Soy Sauce: 10g
  • Mirin: 10g
  • Consommé: 4g
  • Water: 100g
  • Coarse Ground Black Pepper: To taste (be generous!)

👩‍🍳How to make : Tofu Hamburger Steak with Pepper Sauce 

  1. Wrap the tofu in a paper towel, place it in a colander with a weight on top, and let it sit for one hour. To prevent your patties from becoming watery, you must drain the tofu well. 
    • Quick Tip: If you’re in a rush, you can microwave it for a few minutes to release the water quickly. Be careful not to over-cook it, or the tofu will become too dry!
  2. Finely chop 150g of onion. Place them in a microwave-safe bowl, cover loosely with plastic wrap, and heat for 2 minutes. Once cooled, squeeze out any excess moisture.
    • > Why microwave? While sautéing is common, this method saves time and reduces the amount of washing up!
  3. In a large bowl, add the drained tofu and mash it by hand. Don’t just crumble it—aim for a smooth, paste-like consistency.
  4. Add the ground meat, salt, pepper, egg, and the squeezed onions. Mix thoroughly until the mixture is well-combined and tacky.
  5. Divide the dough into three portions and shape them into round patties. Heat oil in a frying pan over medium heat.
    • Important: Wait until the pan is fully heated before adding the patties! If the pan is not hot enough, the meat will stick to the pan.
  6. Cook until one side is beautifully browned. Flip the patties, cover the pan with a lid, and steam-fry them to ensure the center is juicy and fully cooked.
  7. In a separate small pot, combine the 50g of chopped onion, soy sauce, mirin, consommé, water, and plenty of coarse black pepper. Simmer until the onions are soft and the flavors have melded perfectly.
  8. Pour the hot pepper sauce directly over the cooked hamburger steaks in the pan.
