Hamburger steak is a very popular home-cooked dish in Japan. Generally speaking Aibiki mince is used for hamburger steak. (Aibiki mince is a mixture of beef mince and pork mince, and the ratio of beef mince to pork mince is generally 7:3.)
In the recipe for tofu hamburger steak, if you use too much tofu, the dough will become too soft, so 1/3 to 1/2 of the aibiki mince is replaced with momen tofu.
The key to making it well is to squeeze out all the water from the tofu. This is a process to prevent the hamburger steak dough from becoming too soft.
By using tofu, you can make a healthy hamburger steak with low calories and fat.

Tofu hamburger steak
- Onion (150g)
- ☆Momen tofu (150g)
- ☆Aibiki Ground meat (Ground beef 200g and Groud pork 100g)
- ☆Salt (4g)
- ☆Pepper (to taste)
- ☆Egg
- Oil (4g)
Pepper Sauce
- ★Onion (50g)
- ★Soy sauce (10g)
- ★Mirin (10g)
- ★Consommé (4g)
- ★Water (100g)
- ★Coarse ground pepper (to taste)
Tofu Hamburger Steak with Homemade Pepper Sauce COOKING INSTRUCTIONS
Tofu hamburger steak
- Finely chop the onion.
- Remove the firm tofu from its packaging, wrap it in paper towel and place it on a colander.
- Place a weight on top of the tofu and wait for an hour. This will help drain the water from the tofu.
- Mix the momen tofu, ground meat, salt, pepper, egg and onion well.
- Divide the dough into thirds and roll them into balls
- Place the tofu hamburger steaks in a frying pan with heated oil and cook slowly over medium heat.
- Once both sides are browned, pour on the sauce.
Pepper sauce
- Finely chop the onion.
- Mix soy sauce, mirin, consomme, water and pepper in a saucepan and heat.
- Once the onions are cooked, it’s done.
