👩‍🍳 How to make Hawaii Honolulu Cookie Style Salted Shortbread

  1. Creating the “Sand” Texture / Place unsalted butter, sugar, flour, almond flour, salt and vanilla extract in a food processor. Process until the butter and flour are well-combined and look like fine sand or Parmesan cheese.
  2. Clump, Don’t Knead! / Once the dough starts to clump, transfer to plastic wrap and press firmly into a disk. Do not knead, as it makes the cookies tough!
  3. Overnight Rest / Let the wrapped dough sleep in the fridge overnight.
  4. 1cm Thickness / Roll to 1cm thick and cut into 2cm x 5cm rectangles.
  5. The Second Chill / Refrigerate the cut dough for 1 hour before baking to keep the edges sharp.
