- Sugar : 60g
- Cake Flour : 160g
- Almond Flour : 20g (The secret to depth!)
- Salt : 2g (Reduces to 0.5g if using salted butter)
- Vanilla Extract : Moderate amount
👩🍳 How to make Hawaii Honolulu Cookie Style Salted Shortbread
- Creating the “Sand” Texture / Place unsalted butter, sugar, flour, almond flour, salt and vanilla extract in a food processor. Process until the butter and flour are well-combined and look like fine sand or Parmesan cheese.
- Clump, Don’t Knead! / Once the dough starts to clump, transfer to plastic wrap and press firmly into a disk. Do not knead, as it makes the cookies tough!
- Overnight Rest / Let the wrapped dough sleep in the fridge overnight.
- 1cm Thickness / Roll to 1cm thick and cut into 2cm x 5cm rectangles.
- The Second Chill / Refrigerate the cut dough for 1 hour before baking to keep the edges sharp.
- Bake / 20 mins at 170°C (338°F). Let them cool completely. ⋈Note: If the thickness is 5mm, bake for 15 minutes.
