Zakuzaku spicy fried chicken(ザクザクスパイシーチキン)
zakuzaku = crunchy
It is a dish in which the chicken wings are soaked in a spicy seasoning and then fried to give them a crunchy texture.
There are many dishes made by deep frying chicken, such as karaage, chicken tempura, fried chicken, yam nyeom chicken, and 大鶏排.
The first difference between Japanese karaage and fried chicken is the way it is seasoned.
For karaage, chicken is marinated in a sauce made from soy sauce and garlic.
On the other hand, fried chicken has spices mixed into the batter.
Another difference is that for Japanese karaage, it is common to mix potato starch into the batter.
Recently, people tend to prefer a crunchy texture for fried chicken batter. This may be due to the popularity of Korean ASMR and mukbang (competitive eating videos).
The trick to making it crunchy is to cover the chicken with batter twice. The first time, rub the batter into the chicken thoroughly, and the second time, cover the surface.
My recipe uses potato starch and wheat flour for the batter.
However, regular flour has a drawback in that it tends to be sticky. That’s why I use cooking flour.
This flour has a coarse grain and a salt-like texture. Once you start using it, you’ll find it so convenient that you won’t want to let it go.

- chicken wings 8 pieces 420g
- ☆salt 4g
- ☆pepper appropriate amount
- ☆chili pepper 2g
- ☆paprika powder 2g
- ☆cajun spice 2g
- ☆oil 15g
- ☆potato starch 40g
- flour (cooking flour) appropriate amount
- oil appropriate amount
Crispy fried chicken COOKING INSTRUCTIONS
① Wipe the surface of the chicken wings with a paper towel.
② Put the chicken wings, salt, pepper, chili pepper, paprika powder, Cajun spices, oil, and potato starch into a plastic bag and rub together.
③ Wait 15 minutes.
④ Put flour into another plastic bag. I recommend cooking flour, which is less sticky.
⑤ Put the chicken wings into the bag with the flour and shake.
⑥ Deep fry the chicken wings in oil heated to 170 degrees for 10 to 15 minutes.
⑦ Remove the chicken wings to a tray and drain the oil.
The spice is “Cajun Mix” sold by Mascot Foods and can be purchased at Kaldi, Kitano Ace, Amazon, etc. Spicy Cajun-style seasoning with paprika and chili peppers as a base, blended with herbs and spices such as oregano.
I made peperoncino with leftover fried chicken. It was also delicious.
