Bright tamagoyaki that is easy to make



中華風玉子焼き(chuka hu tamago yaki)

What the kind of dish is Chuka hu tamago yaki??

It is a dish similar to an omelet. Egg mixed with Japanese mustard spinach, shiitake mushrooms, and crab sticks and baked in the oven. I added garlic and ginger to make it a little Chinese style. “chuka hu” means Chinese style.

Chuka Aji” is a granular soup stock made from several ingredients such as pork and oysters. Used in soups and stir-fries. You can also use chicken stock granules instead.

Tamagoyaki, or dashimaki tamago, is a classic Japanese breakfast item. It’s almost always in the lunch box. But it’s difficult to roll up well. This recipe is easy to make because you just pour it into a mold and bake it ♡ * ゜

If you change the ingredients to paprika or ham and season with consomme, it becomes like an omelet. The arrangements are endless, such as adding cheese, whitebait, or seaweed tsukudani.

  • Japanese mustard spinach 90g
  • shiitake mushrooms 90g
  • grated ginger 3g
  • grated garlic 3g
  • sesame oil 4g
  • salt 1g
  • 3eggs
  • ☆Chuka aji 5g
  • ☆water 100g
  • ☆sugar 3g
  • ☆soy sauce 5g
  • 3crab sticks 50g



Wash the Japanese mustard spinach, cut off the bottom and cut into 3cm pieces. Cut off the bottoms of the shiitake mushrooms and cut them into strips.

➀Stir-fry Japanese mustard spinach, shiitake mushrooms, ginger and garlic in sesame oil. Season with salt and cool.

②Mix eggs, chuka aji, water, sugar and soy sauce.

③Add Japanese mustard spinach and shiitake mushrooms to the egg mixture.

④Add coarsely loosened crab sticks.

⑤Pour into mold. { I use a 15cm square mold.}

⑥Preheat the oven to 200 degrees.(200 degrees Celsius is 392 degrees Fahrenheit)

⑦Place the baking sheet on the bottom shelf of the oven. Bake for 15 minutes at 200 degrees.

⑧Lower the temperature to 170 degrees and bake for 10 minutes.(170 degrees Celsius is 338 degrees Fahrenheit)

⑨Cool down and cut.
